We’ve been busy in the Taffy Mail kitchen again! Before you dive head first into this month’s box of delicious American treats here’s a recipe to make the goodness last a little longer.

All of our boxes for October’s Birthday/Halloween box contained one of our real favourites, Candy Corn M&Ms, so we cooked them into cookies:

You will Need:

60g of softened butter
50g light brown sugar
60g caster sugar
½ a beaten egg
1 tsp vanilla extract
110g self-raising flour
Pinch of salt
Your pack of candy corn M&Ms

Method:

Preheat your oven to 180oC to save you waiting later. Soften your butter slightly in a microwave or on the hob. Be careful not to melt the butter it just wants to be soft enough that you can dent it with a spoon.

Put all your sugar and the butter into a bowl and cream together using either the back of a spoon or an electric mixer.

Once the sugar and butter is combined add the egg and vanilla. The better your vanilla, the better the cookie so it’s worth investing. The one we use in the Taffy Mail kitchen is a mid range version but if you’re baking for a Halloween event you could stretch to a vanilla bean paste. Mix in the egg and vanilla.

Next pour in the flour and salt. We don’t follow with this madness of sifting flour in the 21st century. Flour doesn’t come with clumps anymore and if it does, we would take it right back to the store and get a clump free bag. Whether you choose to sift or not, stir the flour and salt into the egg mix.

Then add the M&Ms. Fold them gently in by hand to allow them to retain their shape and make sure they’re evenly distributed in the mixture. You will now have the most amazing bowl of cookie dough goodness. The challenge is not to eat the entire bowl of raw cookie dough before it even gets into cookie form.

If you have any mixture left when you’ve finished your tasting, portion the mixture out into walnut sized balls. Place the balls onto some baking paper on a baking tray and push them as flat as possible so they make round disks. It’s a really good idea to put one in the oven by itself to test how big you want your cookies to be and how flat you want to push them. Our first batch is never the best so by doing a test cookie you can make sure the rest are perfectly sized.

You will probably have a little mix left over without any M&Ms like we did. We put some chocolate chips and red velvet food colouring in the remaining mixture and baked them so as not to waste any but be creative. Alternatively you could add some regular English M&Ms to the mix alongside your candy corn M&Ms to make your cookies jam packed with chocolate.
